Deadly Chocolate Guinness Cake

After an amazing weekend sometimes I find that on Tuesday I'm still basking in its afterglow, and on these rare occasions it feels like a  little bit like the weekend has lived on into the week. I had one of those weekends last weekend, and I think it's because I did two things that felt like big accomplishments. First, I ran my second half-marathon in Dublin, and it felt amazing. Apart from crossing the finish line and regaining sensation in my legs, the most amazing part was feeling completely justified in spending the rest of the day with my girlfriends in my pajamas and woolly socks, and naturally eating everything I could lay my hands on.

The second achievement of the weekend was finally making a chocolate Guinness cake. I'd spotted and sampled this cake (which is unlike any other chocolate cake you'll ever try, trust me) in one of my favourite Dublin cafes, and was keen to master the art of the Guinness bake myself. Well, it's only about five months later, but here it is.

I used Nigella Lawson's recipe, which has a very generous amount of sugar, fat and stout in it ... just close your eyes while you're weighing out the ingredients. I took it out of the oven even though I wasn't sure that it was properly baked and I think this is the trick, because the charm of the Guinness cake is its heady, damp texture. You really don't want to dry this beauty out. My cake sunk a little in the middle, and had a beautiful cracked black surface as it cooled. The topping is a combination of cream cheese, double cream and icing sugar, and though it looks very pretty and makes the cake look like a frothy pint of the good stuff, I found it too much and had to scrape it off my slice. Next time I think a dusting of icing sugar will be enough, and maybe a spoonful of ice-cream on the side instead.

Ingredients

For the cake
  • 250 ml Guinness
  • 250 grams unsalted butter
  • 75 grams cocoa powder
  • 400 grams caster sugar
  • 142 ml sour cream
  • 2 medium eggs
  • 1 tablespoon(s) vanilla extract
  • 275 grams Plain flour
  • 2.5 teaspoon(s) bicarbonate of soda
For the topping
  • 300 grams cream cheese
  • 150 grams Icing sugar
  • 125 ml double cream (or whipping cream)

The Last Few Days

Last week I was working at a conference (which I'm excited to talk to you about tomorrow), so I managed to get a real "Friday feeling" by the time 7pm rolled around. It's a bit of a novelty for me, so I celebrated with a glass of red wine, some falafel and The Sopranos. Reading under warm sunny skies in the Iveagh Gardens made for a perfect Saturday afternoon with an iced coffee in hand, and on Sunday more banana bread was whipped up, and a trip to the fusion food market was followed by lazily watching the Wimbledon men's final (did you see it?) and being treated to tapas. By far the most exciting part of my weekend was finding out that I won my first ever giveaway over on Allie's blog. I can't wait to spend a future weekend with my Dickens Bicentenary:)

Hello Monday



Monday has rolled around again, but at least it's a sunny one. How was your weekend? I flew over to England on Friday night for a quick trip to visit my parents and catch up with some old friends. One of my closest friends and her Australian husband are moving down under next week, so I got the chance to go for a cupcake filled afternoon tea with her and say a sniffly goodbye. Maybe my favourite part of the weekend was arriving on Friday night and snuggling down with my Mum to drink red wine and watch Meryl Streep movies, just the two of us. It's a little ritual of ours that I love so much.

p.s. Do you want to hear a secret? Though they look so pretty, this weekend confirmed that I really don't like cupcakes (sssssh). The frosting is just too much for me to handle - it sounds so mean to be anti-cupcake though, don't you think?!

Weekend Snaps.




Hope you had a great weekend. Can you believe that it's Monday again? This weekend I took my camera out for the first time in a long while, the skies were so blue but it was cold, cold, cold and windy too (look at my hair!) Otherwise, I had a Saturday and Sunday full of warm food, hot teas, chores, and chilly walks.

Weekend Snaps.




























Maybe Tuesday is a little late to be talking about the weekend, but how was yours? Here are a few fuzzy phone snaps which captured just a small part of my wonderful weekend. Including a huge vegetarian brunch, a cow/farmer spotting in Dublin's Temple Bar (the last place you'd expect to see this), and a few delicious Saturday night gin and tonics. In between these photos I also went to see The Descendants at the cinema. I cried like a baby but loved it (celebrity spotted Shane MacGowan of The Pogues watching the same movie too). On Saturday night I watched an Irish film at a friend's - Into the West - it's absolutely brilliant. It reminds me of The Never Ending Story, and its lead character is the sweetest little boy. A must see. Sunday was a bit of a washout, it didn't stop raining for even two minutes, but I took the chance to start a new book (I'll tell you all about it soon) and have a sofa day. Sometimes you just have to use the rain as an excuse...
